Recipe Cold yogurt soup with blueberries

Ingredients for 4 people

300 g frambuesas (frescas o congeladas)
250 ml suero de mantequilla
500 g yogur desnatado
1 cucharadita de piel rallada de 1 limón
1 sobrecito de azúcar de vainilla
4 cucharadas soperas de azúcar moreno
100 g cranberries (arándanos rojos) desecados
30 g nueces de California
1 cucharadita de aceite
Hojas de menta o melisa de limón para decorar

Preparation

  1. Pasar las frambuesas por un colador. Desleírlas en el suero de mantequilla con el yogur, la piel de limón, el azúcar de vainilla y 2 cucharadas soperas de azúcar. Añadir unos 2/3 de los cranberries. Enfriar bien la sopa.
  2. Picar las nueces. Calentar aceite en una sartén pequeña. Tostar brevemente las nueces. Mezclar las nueces con el resto del azúcar y de cranberries y espolvorear encima de la sopa fría. Servir la sopa decorada con hojas de menta o melisa de limón.

Conservation

En la nevera hasta servirse.
